We’ve had a really nice harvest this year, with the exception of carrots, which we seem to be incapable of growing no matter what. But my favorite crop has been the potatoes. We grew a fingerling variety that’s just really smooth and creamy. Thought I’d share this quick dinner Drew’s been making with them.
Fresh potatoes, oven roasted with some rosemary and thyme, mixed with pan fried summer squash, onion, and green beans. Nom nom nom.
